Covid de Pandemic

As the header says, nobody fought us for the piñata. We’ve been hoping to put on a few pounds before swimsuit season to insulate us from the cold water in the pool. This should do the trick. Feeling lucky!

Mary loved her little Covid Bandito and Keith loved his dancing Salsa Sweetie. As you can see, isolation has been hard on both of us.

The Cinco de Mayo festivities included a wonderful supper of Granny’s Crunchy Taco Casserole with all the tradition maxi-fixings.

Thanks to the essential workers at Pick n’ Save, I got all the ingredients I needed to make home-made Apple Grandes (solidarity Taco John’s fans)!

Unfortunately, I am part Irish and would rather celebrate than cook. The Apple Grandes will wait until we eat the leftovers tomorrow. I threw together some fried ice cream (skipped the frying, used rice krispies), then doused it with enough goodness that Keith never noticed.

We enjoyed the musical stylings of Carlos Santana and danced to Alexa’s salsa playlist. In the process, we booked out 10,000 steps! We love all things Mexican - the art, the food, the music, the country, the culture, the language, the people - especially the people.
